At first glance, Australian Black Limes might seem like a niche product, but behind it is a story grounded in curiosity, creativity and a deep connection to the land.
Based on an off-grid farm in Wanerie, in the Gingin region of Western Australia, the journey began simply with a love for citrus. The founders planted a lime orchard, confident the trees would thrive in the red sandy soils and wide open landscape. As the orchard matured and began producing beautiful fruit, the next question naturally followed — what could they create from it?
Like many small producers, they were searching for something that would set their farm apart. Then came a message from a neighbour: “Have you ever heard of black limes?”
They hadn’t. But that one question changed everything.
After researching and experimenting, they discovered that black limes are a traditional ingredient used in other parts of the world, known for their deep, complex citrus flavour. It sparked an idea. What if they could create something truly unique here in Australia?
That moment led to a bold decision — to become Australia’s first black lime farm.
Today, that idea has grown into Australian Black Limes, a business built on innovation, patience and a genuine love for the process.

Turning Fresh Fruit into Something Unexpected
Every product begins in the orchard, where limes are carefully handpicked at the right stage of maturity. This hands-on approach ensures the fruit is handled gently and selected for quality before moving into the next stage.
Back on the farm, the limes are washed using rainwater collected on site, sorted and prepared for transformation. From there, the process begins that turns fresh citrus into something entirely different.
Over time, the limes are aged, gradually developing their signature dark colour and rich aroma. What starts as a bright, zesty fruit evolves into something deeper and more complex, with a flavour that is both tangy and slightly smoky.
Once ready, the black limes can be used whole in cooking or milled into a fine powder. This powder becomes the base for a growing range of products, including spices, relishes and sauces, all designed to showcase the unique flavour of black lime.
It’s a process that combines traditional inspiration with a distinctly local approach, creating something new within the Australian food landscape.

A Small Business Gaining Big Attention
One of the early signs that the idea had real potential came shortly after launching their website.
Without any advertising, enquiries started coming in. First, a Melbourne-based spice company reached out looking to purchase ten kilograms of black limes. Then, while that conversation was still underway, another request followed — this time for forty-five kilograms.
It was a turning point. What began as an experiment on the farm was quickly gaining traction, and it became clear that there was genuine interest in Australian-grown black limes.
Since then, the business has continued to grow, supported by a combination of curiosity from customers and a willingness to try something new.

Australian Black Limes is very much a family-run business, with every part of the process connected to life on the farm.
Working off-grid has shaped the way the business operates. Rainwater is collected and reused, the land is carefully managed, and sustainability is part of everyday decision-making rather than an added extra.

Markets and festivals give Australian Black Limes the opportunity to connect directly with people, many of whom are discovering black lime for the first time. Being able to explain the process, offer tastings and see people’s reactions is one of the most rewarding parts of the business.
It’s also where ideas grow. Conversations with customers often lead to new product ideas, recipe inspiration and a deeper understanding of how people are using black lime in their kitchens.
